Ingredients

  • 1 loaf crusty bread, thickly sliced
  • 4 tomatoes, chopped
  • 2 cloves garlic, crushed
  • 1 bunch parsley, chopped
  • 1/2 tablespoon basil, chopped
  • 1/2 red onion, finely chopped
  • olive oil
  • salt and pepper to taste

Method

  • Brush both sides of bread with olive oil and grill on both sides until toasted.
  • Mix tomatoes, basil, onion, garlic, parsley, olive oil in a bowl.
  • Put mixture on toast and season with salt and pepper.
  • Serve warmed under grill or cold.
