Ingredients
2 cups fresh basil leaves 1/4 cup grated Parmesan cheese 1/2 cup Olive oil 3 tbsp pine nuts 3 cloves garlic
Method
Boil water & get pasta cooking.
Finely chop basil.
In a mortar & pestle:
- Crush garlic
- Add pine nuts, crush
- Add basil, crush
- Add parmesan cheese, crush/mix
Mix in olive oil.
In a double boiler, heat pesto slightly (approx until cheese starts to melt).
Drain pasta, and put into pesto saucepan. Toss & serve.
