Ingredients
- 60g unsalted butter
- 3/4 cup sugar
- 3 eggs, separated
- 2 teaspoons finely grated lemon and/or lime zest
- 1/4 cup self-raising flour
- 3/4 cup milk
- 1/3 cup lemon and/or lime juice
Method
- Heat oven to 180C.
- Blend butter, sugar, 2 egg yolks (discard 1), and lemon/lime zest until light and fluffy.
- Add flour and mix.
- Add milk to form a smooth batter.
- Stir in lemon/lime juice.
- Whisk egg whites until firm (so you can turn the bowl upside down), and fold into the batter.
- Pour into mixture into a 5 cup capacity souffle dish. Place this dish in a large baking tin filled with enough hot water to come a third of the way up the side of the dish.
- Bake for 50 minutes, until the top is golden and risen.
Note: can be baked in 6 individual dishes. Reduce baking time to 30 minutes in this case.
