Mum tells me they used to make this in September and store in the a cool, dry place until Christmas.
Makes 2 medium-sized puddings.
Ingredients
- 5 oz. suet
- 5 oz. fresh white breadcrumbs
- 4 oz. soft brown sugar
- 3 large eggs
- Grated rind of 1 lemon
- 2 tablespoons rum or whisky
- 6 oz. sultanas
- 6 oz. currants
- 6 oz. seedless raisins
- 4 oz. Glace cherries
- 1 oz. mixed peel
- 1 oz. chopped almonds
Method
Grease the basins. Put all ingredients into a large bowl and mix well. It can be left to stand a while before putting into the basins. Cover with a piece of greased paper, then place a large piece of foil right over the basin and tie round with string.
Steam or boil gently for 9 hours. Reheat by steaming or boiling for 3 hours.
