Ingredients
- 500g potatoes, skin on
- 185g tin tuna, drained
- 1 egg
- 1/2 cup carrot, grated
- 3/4 cup zucchini, grated (corn also good)
- 1/2 cup tasty cheese
- 1/2 cup wholemeal flour
- 3 tablespoon canola oil
Method
NB: Try keeping some parts of each ingredient (except egg) aside for Bobby to eat individually.
Cut potatoes into quarters, put in a saucepan with cold, lightly-salted water and bring to the boil. Once soft, drain water and mash potatoes with the skin on.
Mix the remaining ingredients except the oil in a bowl.
Add potato mash to tuna mixture, season with salt and pepper then fold ingredients together until well combined.
Shape patties using your hands (1/4 cup measurement for each patty).
Heat the oil a large frying pan. Place the patties in the oil and fry until golden brown.
