Ingredients
- 1 serve of homemade pastry
- 6 large Granny Smith apples
- 20g butter
- 1/2 cup caster sugar
- 1 tbsp lemon juice
- 2 tbsp cornflour
- heaped tsp cinnamon
- pinch cloves
- pinch nutmeg
- vanilla icecream
Note: more apples is better than fewer apples
Method
- Prepare pastry and leave in fridge for 1/2 hour.
- Peel, core, and cut apple into chunks.
- Melt butter in large saucepan and add apple, sugar, lemon juice, and 1 tablespoon of water.
- Cook over medium heat for 5-7 minutes or until apple has softened. Add extra sugar if needed.
- Put spices and cornflour in a little mug, and mix with a little water or some of the liquid from the apple mixture. Make a runny paste with this, and add it to the apple mixture. Cook - stirring well - for 1 minute. Set aside to cool.
- Heat oven to 190 degrees C.
- Roll out 2/3 pastry for base and edges between 2 sheets of greaseproof paper.
- Place apple mixture into dish.
- Roll out remaining pastry for lid. Make to incisions in the centre for steam to escape.
- Bake for 40 minutes, or until golden.
- Optional to serve with vanilla icecream or cream.
