Ingredients

  • 4 cups (385g) rolled oats
  • 1 1/2 cups (225g) wholemeal flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 350g applesauce (or 3 ripe bananas)
  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/4 cup of water, if needed
  • 2 tablespoons chia seeds or ground flaxseeds
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips
  • 1 cup walnut pieces
  • 1/2 cup sunflower seeds or pumpkin seeds
  • 1/2 cup desiccated coconut

Method

  1. Heat oven to 180 degrees C and line three baking trays with baking paper.
  2. Combine all ingredients in a mixing bowl. I usually use the Kitchaid®. Add some water if the mixture is not binding together.
  3. Form into cookies and place on baking tray.
  4. Bake for 30 minutes.
  5. Allow to cool. Store in an air-tight container.
