Ingredients
- 250g dark cooking chocolate
- 2 tablespoons black coffee (the drink, not the substance) or water
- 18.75g butter
- 1 tablespoon brandy or rum
- 4 eggs
Method
- Cut chocolate into small pieces and melt in the top of a double boiler or in a heat proof bowl over gently boiling water.
- Remove from heat and stir in the butter and brandy/rum, and coffee.
- Separate eggs, add yolks to warm chocolate mixture, stirring continuously.
- Whisk egg whites until stiff and stir into mixture.
- Pour chocolate mousse into small mousse pots and place in refridgerator until set.
