Ingredients
- 1 kg floury potatoes
- 2-3 tbsp olive oil
- salt and pepper
- 1 clove garlic, chopped or crushed
- 1 onion, chopped
- mixed dried herbs or fresh rosemary
Method
Preheat oven to 200 degrees.
Peel and cut potatoes into even-sized pieces. Cook in a large saucepan of boiling water for 8-10 minutes or just tender. Drain well and return to the saucepan. Shake well in the pan, or use a fork to roughen up the edges a bit.
Pour oil into a baking tray and place in the oven for 5 minutes. Remove, add potatoes to the tin and stir to coat with oil. Season well with salt and pepper.
Roast on top shelf of oven, turning occasionally. After about 30 minutes, add the onion, garlic, and mixed herbs. Cook for another 20-30 minutes.
You can roast other vegetables, too. Sweet potato is nice with bouquet garni.
