Ingredients
- 2 1/2 cups self-raising flour
- 1/2 teaspoon mixed spice
- 30g butter, chopped
- 1 cup cold mashed pumpkin
- 1/4 cup brown sugar
- 1 egg, beaten
Method
- Preheat oven to 220°C.
- Put (sift if you can be bothered) flour and spice together into a large bowl. Rub butter into the flour.
- Add pumpkin, sugar and egg.
- Mix to form a soft, sticky dough. This will probably involved using your hands, almost kneading it in the bowl. Add a little (perhaps a tablespoon) of water if it is too dry.
- Turn out and press or roll out to form a round about 2cm thick. Cut into rounds about 5cm across.
- Place close together on a tray covered with glad bake. Bake for 12-15 minutes. Cool on a wire rack.
