Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, crushed
  • 2 onions, sliced
  • 2 x 400g cans of chopped tomato OR 1kg fresh tomato, chopped
  • 1 tablespoon sugar
  • 150g tomato paste
  • salt, if required
  • fresh basil, to taste
  • fresh oregano, to taste

Method

  • Fry onion and garlic in olive oil until onion is tender.
  • Add tomato, tomato paste, and sugar, and cook for 20-30 minutes until the mixture starts to thicken a little.
  • Season with salt and herbs.
  • Serve on pasta topped with freshly grated Parmesan cheese.
