Ingredients
- 1 sheet puff pastry
- 2 tbsp olive oil
- 4 brown onions, sliced
- 2 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 1/2 cup finely grated parmesan cheese
- 12 anchovy fillets, drained
- 1/4 cup halved black olives
- 1 tbsp thyme leaves
Method
Preheat oven to 200 degrees C. Heat a large frying pan over medium heat. Cook the oil and onions, stirring, for 10 minutes or until soft and golden. Add the vinegar and sugar and cook for 2 minutes. Set aside to cool.
Trim pastry to roughly rectangular shape 30cm x 34cm, and cut into 4. Place on a greased baking tray and sprinkle with the parmesan, leaving a 1cm border. Top with the onion mixture, anchovies, olives, and thyme. Bake for 20 minutes or until puffed and golden.
