Ingredients
- 1 red capsicum, halved
- 1 red onion, peeled
- 1 red chilli, halved (optional)
- 5 or 6 tomatoes
- 1/2 cucumber
- 200g feta
- 2 cos lettuces
- 2 or 3 handfuls fresh herbs (parsley, basil, mint, chives)
- 2 lge tsp English mustard
- 3 tbsp white wine vinegar
- 8 tbsp olive oil
- sea salt and ground black pepper
Method
- Put all vegies through a shredder filter of the food processor, being careful to not crush it.
- Mix mustard, vinegar, oil, salt and pepper in a small receptacle for dressing.
- Put vegies in a large bowl with chopped herbs and crumbled feta, then mix dressing through.
