Ingredients
- 4 cups (385g) rolled oats
- 1 1/2 cups (225g) wholemeal flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 350g applesauce (or 3 ripe bananas)
- 1/2 cup coconut sugar
- 1/3 cup coconut oil
- 1/4 cup of water, if needed
- 2 tablespoons chia seeds or ground flaxseeds
- 2 teaspoons vanilla extract
- 1 cup dark chocolate chips
- 1 cup walnut pieces
- 1/2 cup sunflower seeds or pumpkin seeds
- 1/2 cup desiccated coconut
Method
- Heat oven to 180 degrees C and line three baking trays with baking paper.
- Combine all ingredients in a mixing bowl. I usually use the Kitchaid®. Add some water if the mixture is not binding together.
- Form into cookies and place on baking tray.
- Bake for 30 minutes.
- Allow to cool. Store in an air-tight container.
