Ingredients
- 2 average sized green apples (peeled or unpeeled), chopped
- 1 cup rolled oats
- 1 tub (approx 1 cup) vanilla yoghurt
- 2/3 cup honey
- 1/3 cup coconut (recipe says shredded, I usually use dessicated)
- 1/3 cup oil
- 1 egg
- 1 1/2 cups SR flour
- 2 tsp ground cinnamon
- 1/4 tsp ground cloves
- pinch nutmeg
Method
- Heat oven to 180 degrees C and prepare muffin tray
- Combine apples, oats, yoghurt, honey, coconut, and oil in a mixing bowl. Mix well. Let mixture stand for 10 minutes.
- Add egg and mix thoroughly.
- In another bowl, combine flour and spices, mix well.
- Add the flour mixture to the oat mixture and stir until just combined.
- Fill muffin cups (they'll be quite full).
- Bake for 25 minutes
- Cool in the tray for 5 minutes before moving to a cooling rack.
