Ingredients

  • 30g unsalted butter
  • 30g margarine
  • 3/4 cup sugar
  • 3 eggs, separated
  • 2 teaspoons finely grated lemon and/or lime zest
  • 1/4 cup self-raising flour
  • 3/4 cup milk
  • 1/3 cup lemon and/or lime juice

Method

  • Heat oven to 180C.
  • Blend butter, marg, sugar, 2 egg yolks (discard 1), and lemon/lime zest until light and fluffy.
  • Add flour and mix.
  • Add milk to form a smooth batter.
  • Stir in lemon/lime juice.
  • Whisk egg whites until firm (so you can turn the bowl upside down), and fold into the batter.
  • Pour into mixture into a 5 cup capacity souffle dish. Place this dish in a large baking tin filled with enough hot water to come a third of the way up the side of the dish.
  • Bake for 50 minutes, until the top is golden and risen.

Note: can be baked in 6 individual dishes. Reduce baking time to 30 minutes in this case.
