Ingredients
- 1 green apple, grated
- 1 carrot, grated
- 1 cup rolled oats
- 1 1/2 cups SR flour
- 3/4 cup brown sugar, firmly packed
- 1 egg, lightly beaten
- 1 cup vanilla yoghurt
- 1 tsp mixed spice
- 1/3 cup vegetable oil
Oat topping
- 2 tbsp plain flour
- 1/4 tsp mixed spice
- 1 tbsp marg
- 1 tbsp brown sugar
- 1 tbsp rolled oats
Method
- Heat oven to 190 degrees C and prepare muffin tray.
- To make oat topping, place flour and mixed spice in a medium bowl and rub in marg until mixture is crumbly. Stir in sugar and rolled oats.
- For muffins, combine flour, oats, sugar, spice, apple, and carrot in a large bowl. Add egg, yoghurt, and oil, then stir until just combined.
- Fill muffin cups, then sprinkle with oat topping.
- Bake for 25 minutes, turning tray round about half way.
- Cool in the tray for 5 minutes before moving to a cooling rack.
