Ingredients

  • 2 average sized green apples (peeled or unpeeled), chopped
  • 1 cup rolled oats
  • 1 tub vanilla yoghurt
  • 2/3 cup honey
  • 1/3 cup coconut
  • 1/3 cup oil
  • 1 egg
  • 1 1/2 cups SR flour
  • 2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • pinch nutmeg

Method

  1. Heat oven to 180 degrees C and prepare muffin tray
  2. Combine apples, oats, yoghurt, honey, coconut, and oil in a mixing bowl. Mix well. Let mixture stand for 10 minutes.
  3. Add egg and mix thoroughly.
  4. In another bowl, combine flour and spices, mix well. Add to oat mixture and stir until dry ingredients are moistened.
  5. Fill muffin cups (they'll be quite full).
  6. Bake for 25 minutes
  7. Cool in the tray for 5 minutes before moving to a cooling rack.
