* 1 teaspoon ground coriander<br />
* olive oil<br />
* tablespoons soy sauce<br />
* 2 cups chopped spinach<br />
* 1 sweet potato, cooked<br />
* 10 large tortillas<br />
* 1 jar salsa<br />

== Method ==<br />
* Heat oven to 180C.<br />
* Saute onions, garlic, cumin, and coriander in a little olive oil until softened and starting to brown.<br />
* Add soy sauce and spinach. Cook until spinach wilts.<br />
* Add sweet potatoes, black beans and salt if needed.<br />
* Place 1/2 cup of mixture in center of each tortilla. Wrap like a burrito and place, seam-side down, in a baking dish.<br />
* Pour over salsa, cover, and back for 25 minutes.<br />
