* 50g semi-dried tomatoes&lt;br /&gt;

* 400g can chickpeas, rinsed and drained&lt;br /&gt;
* 1 bunch fresh flat-leaf parsley, roughly chopped&lt;br /&gt;
* 1 bunch fresh mint, roughly chopped&lt;br /&gt;
* 1 tbsp olive oil&lt;br /&gt;
* 2 tbsp lemon juice&lt;br /&gt;
&lt;br /&gt;
== Method ==&lt;br /&gt;
Soak bulgar wheat in the water for 10 minutes. Drain and press firmly to release any excess water.&lt;br /&gt;
&lt;br /&gt;
Put all ingredients except oil and lemon juice into a bowl and gently mix to combine.&lt;br /&gt;
&lt;br /&gt;
Whisk olive oil and lemon juice, and pour over chicken mixture. Toss, and serve immediately.&lt;br /&gt;
