* In a medium/large saucepan, gently fry onion and garlic until soft. If using mince, fry this too, until brown&lt;br /&gt;
* Add grated carrot and zucchini. If using beans, add them now too.&lt;br /&gt;

* Add stock cube, water, tomato soup, cayenne pepper and oregano&lt;br /&gt;

This pudding is cooked in a pudding steamer.  If you don&amp;#039;t have a pudding steamer you can use a different bowl with foil or grease-proof paper for a lid, tying the lid on with string.  The steamer is then placed in boiling water.  The water should come high up the steamer but not such that leaks into the steamer.  If required, place a racking (or something else - be creative!) in the bottom of the pan so the bottom doesn&amp;#039;t touch and burn.&lt;br /&gt;
&lt;br /&gt;
* Soak fruit for a few days in brandy.&lt;br /&gt;
* Make the tea and let it cool and bring the pan of water to the boil.&lt;br /&gt;
* Mix all ingredients except the tea in a bowl.&lt;br /&gt;
* Add tea to make a moist but firm consistency.&lt;br /&gt;
* Put into foil-lined and greased pudding steamer (leave room at the top for it to rise) and cook for about 4 hours, adding water to the pan if necessary.&lt;br /&gt;

* Cut little broccoli florets off the head and put them to one side. &lt;br /&gt;
* Halve the thick stalk lengthways, then slice thinly. &lt;br /&gt;
* Pick basil leaves and discard the stalks. &lt;br /&gt;
* Grate parmesan.&lt;br /&gt;
&lt;br /&gt;
* Add tagliatelle, potato shavings, and broccoli stalks to boiling water, and cook according to tagliatelle instructions. 2 minutes before pasta is ready, add the broccoli florets.&lt;br /&gt;
* Drain everything in lge colander over a bowl to save some of the water. Return pasta &amp;amp; broccoli to pan. &lt;br /&gt;
* Roughly chop half basil leaves and add to the pan with pesto and half parmesan. Give it a good stir and if sauce is too thick, add some of the water. &lt;br /&gt;
&lt;br /&gt;
* Divide pasta into serving bowls and sprinkle rest of parmesan and basil over the top.&lt;br /&gt;

Steam or boil gently for 9 hours. Reheat by steaming or boiling for 3 hours.&lt;br /&gt;

* In another bowl combine sugar, spices, and flour. Gently stir into the fruit mixture.&lt;br /&gt;
* Spoon fruit filling into prepared crust, then dot with butter. Top with remaining pastry, leaving slight overhang. Crimp edges of top and bottom crusts together, sealing fruit into the shell.&lt;br /&gt;
* Bake for approx 45 mins.&lt;br /&gt;
* Optional to serve with vanilla icecream or cream.&lt;br /&gt;

* Place the yeast, milk, and 2 tsp of the sugar in a mixing bowl and set aside for about 5 minutes, until the mixture starts to froth a little.&lt;br /&gt;
* Add the flour, mixed spice, cinnamon, butter, egg, sultanas, mixed peel, and remaining sugar.&lt;br /&gt;
* Mix to form a sticky dough.&lt;br /&gt;
* Knead the dough on a lightly floured surface for 8 minutes.  I&amp;#039;m not usually an advocate of a floured surface for kneading but in this case you will need it!&lt;br /&gt;
* Place in an oiled bowl, cover with a tea towel, and leave for 1 hour or until doubled.&lt;br /&gt;
* Divide the dough into 12 pieces and roll into balls.&lt;br /&gt;
* Grease a 23cm square cake tin (or use glad-bake!).  If you haven&amp;#039;t got a cake tin, just use a baking tray instead.&lt;br /&gt;
* Place the balls closely together in the tin.&lt;br /&gt;
* Heat oven to 200°C.&lt;br /&gt;
* Cover with a tea towel and leave for a further 30 minutes.&lt;br /&gt;
* Combine the extra flour and water and place in a piping bag.  Pipe across the buns to form crosses.  Note that if you are doing a double mixture, one quantity of the piping mixture should be enough.&lt;br /&gt;
* Bake for 25-30 minutes or until well browned and springy to touch.&lt;br /&gt;
* You are meant to brush the hot buns with a glaze, but I usually don&amp;#039;t bother.&lt;br /&gt;

* Place fish in a baking dish, season with salt and pepper and pour over 400ml milk. Cover with foil and bake for 20 minutes until fish flakes away slightly when pressed with a fork. Remove fish, reserving milk. When cool enough to handle, flake fish into bite-sized pieces.&lt;br /&gt;
* Cook potatoes in boiling salted water until tender. Drain and keep warm. Melt half the butter in a saucepan, stir in flour and cook over low heat for 2-3 minutes.&lt;br /&gt;
* Slowly add reserved milk and continue to cook until thickened. Add fish, peas, parsley, egg, lemon juice, salt and pepper.&lt;br /&gt;
* Mash the potato with the remaining 50ml milk and the remaining butter until smooth, then season. Pile the fish mixture into a 1 litre-capacity baking dish, spoon the mash on top and smooth with a spatula. Trace a pattern into the mash with the tines of a fork and sprinkle with grated cheese.
